Banana Cake: a delicious morning breakfast!




Telling the truth: who doesn't love to wake up in the morning with a good cappuccino and a tasty and delicious fresh cake? Today we want to give you this easy recipe: banana cake!

When I was living in Honduras I usually had breakfast with pancakes and a super tasty banana cake at least once a week...it was nice to start!

It's a lovely idea even for your children: it's reach in fruit, it gives energy and it's a healthy snack to bring to school, office or wherever you might be: better than fried stuff or junk food.


So let's start with the ingredients and how to make it!


Ingredients for a medium cake (cake pan 30 cm diameter around)

5 ripe bananas + 1 banana to garnish

2 eggs

130 gr brown sugar

140 gr butter or 120 gr seeds oil

240 gr white flour ( 120 gr 00 flour + 120 gr potato starch)

16 gr baking powder

Grated lemon zest (1 lemon)

Chocolate flakes to garnish

Powdered sugar to garnish


Directions


First of all prepare your ingredients all together on the table in order to work in a clean and organized way.

Start peeling and then smashing the 5 ripe bananas till they are completely reduced in a sort of a cream: set them aside.






Whisk the eggs with brown sugar till they get homogeneous and fluffy enough.

Melt the butter and add it to the eggs and sugar, then add smashed bananas to all these ingredients.

Mix very well and when it's homogeneous enough, add the filtered flours and the baking powder.

Grate the clean zest of a lemon and add it to the cake ingredients too.

At this point put some butter in the cake pan, distribute it in a proper way with your hands, add a small amount of flour, distribute it too and turn the dough over the cake pan.




Once the dough is distributed, garnish with the other ripe banana cut into regular rings, add some brown sugar on top and put in the oven for 50/55 minutes, 180°: you may need some more time or less time , it depends on you oven, so keep an eye on it.







When your cake is ready let it cool down then start decorating it with chocolate flakes and powdered sugar.
