200 gr 00 flour
2 eggs - about 80 gr each
a pich of salt optional
1 clove of garlic
1 spring onion
mussels and clams to taste
fresh basil leaves
fresh chopped parsley
extra virgin oliv oil
salt and pepper (or chili pepper)
Mix the eggs and flour to obtain a thin sheet and make some Tagliatelle. For the complete description of the homemade Tagliatelle CLICK HERE
Bring a pot of water to a boil, add salt and add the tagliatelle.
In a non-stick pan, sauté the garlic and spring onion in the oil, add the mussels and clams and the parsley, cover and let the seafood open. At this point, add the previously washed yellow cherry tomatoes and basil. Let it cook for a couple of minutes then turn off. There must be some cooking liquid left (still keep a little water from the pasta if the sauce dries up).
Drain the pasta "al dente" and pour it into the pan with the seafood after rekindling the fire. Finish cooking by mixing the Tagliatelle with the seafood sauce.
Serve with ground pepper, a drizzle of oil and chopped parsley. You will bring to table a tasty and colorful first course that everyone will appreciate.
