Today I was struck by the desire to travel beyond borders and use some colourful, fragrant ingredient, with the flavor of other worlds, other cultures... I opted for Turmeric. The fresh one is delicate and still gives a unique aftertaste as well as the color.
Quick and tasty dish? Easy to prepare? My turmeric chicken with vegetables and fresh mint is just like that!
4 Person doses:
400 g of chicken breast
1 onion
1 carot
2 zucchini
taggiasche olives and black greek olives (use what you have o you can find)
1 sprig of rosemary
fresh mint
1tumeric root
salt & peppar
extra virgin olive oil
Direction:
Wash and cut the vegetables into pieces, slice the onion thinly
cut the chicken into strips or pieces
Put a little oil in a non-stick pan, fry the onion with the rosemary, add the vegetables and sauté, after 1 minute add the chicken, after another minute pour the olives and grate the turmeric root without the peel inside, salt and pepper.
Serve with fresh mint and a drizzle of raw oil.
Tips on using Turmeric
use gloves because turmeric stains a lot
combine turmeric with extra virgin olive oil and/or pepper to activate the beneficial properties of the root
Never cook the turmeric for too long, 2-3 minutes. Add it at the end of cooking your dishes.
