Ingredients for 4 people:
200 g black cabbage
150 g red lentils
1 potato
1 carrot
2 spring onions
1 bay leaf
3 mint leaves
1 spring of rosemary
1 sachet of saffron
2 tablespoons of extra virgin olive oil
vegetable broth
salt
black pepper
Wash the vegetables carefully, cut the carrot and spring onions into small pieces, place them in a large pan to fry in oil. Add the aromas, mix, then the potato cut into pieces, and finally the black cabbage leaves cut into strips and deprived of the central hard coast, keep some to add raw at the end. Pour in the filtered vegetable broth (you can also use hot water). Bring to the boil.
Llet it cook over medium heat for about 15 minutes, add salt and then add the lentils which you have rinsed under running water. Another 7/10 minutes and your soup is ready. At this point, dissolve the saffron in a little soup liquid and add it to the pan, stirring.
Serve with a sprinkling of pepper and a drizzle of raw oil. And now the detox black cabbage and red lentil soup is ready
