Pappardelle with Goji Berries, Fennel, Anchovies and Pine Nuts


Ingredients for 4 people:

  • 320 g of wholemeal pappardelle or similar pasta

  • 1 clove of garlic

  • 30 g goji berries

  • 6 anchovy fillets

  • 30 g of toasted pine nuts

  • grated homemade bread

  • wild fennel

  • extra virgin olive oil

  • chili pepper (optional)

Brown the garlic clove with a drizzle of oil, add the anchovies and a little water to allow them to dissolve.


Cook the pappardelle in salted water. Drain a few minutes before optimal cooking and sauté in a pan over a moderate heat, first adding the goji berries and finally, the pine nuts, fennel, a little oil, and the grated homemade bread.

If you like, you can add chilli or a sprinkling of pepper and a few more sprigs of fresh fennel.


A recipe that couldn't be quicker! Five minutes of cooking and you bring to the table an elegant first course which, personally, makes me think of splendid Sicily.
