We offer you a delicious and fresh dessert, a recipe that we wanted to try immediately with a small variation.

Ingredients for 6 people:
500 g of strawberries
2 eggs
50 g sugar
150 ml of whipping cream
80 g of icing sugar
300 g of ricotta
150g of ladyfingers
250g of whipped cream
1 glass of rum
(we replaced it with the juice of 2 oranges diluted with water and
flavored with 3 crushed cardamom seeds)
Preparation:
Cover the charlotte mold with cling film, pass the ladyfingers in orange juice which you have diluted with a little water, possibly sweetened if too sour and flavored with chopped cardamom seeds (or in rum diluted with water) then arrange them in the recesses of the mold and place in the freezer
Blend the egg yolks with the sugar until frothy, add the sifted ricotta and mix well.
Whip the cream with the icing sugar and add it to the other mixture.
Wash and cut approximately 300 g of strawberries in half, take the mold from the freezer, fill with half the cream and half the strawberries on top, pour in the remaining cream and more strawberries.
Place in the refrigerator at least 3 hours before serving. Once the cake is unmoulded, decorate with strawberries and whipped cream to taste.
