In season: Risotto with Asparagus

Here am I, again with you! Broadcasting from a new location which will be my homeland for the next months! Are you wondering about it? I'm in Switzerland, and more precisely in Cresciano, a wonderful place nearby mountains , lakes and rivers, but above all, nearby my beloved horses!

Anyway, I will continue writing and cooking my recipes for you and proposing italian and swiss delicious...Food Bites to be tried!

I went to Bellinzona on Saturaday and I found out some fresh asparagus, so I decided to cook a risotto which will be perfectly in season!

Are you ready? So, let's start!

Serving size 4

380 gr Carnaroli rice

A bunch of asparagus

A big gold onion

A carrot

A piece of celery with its leaves

A juniper berry

A glass of white wine

A spoon of butter - Extra virgin olive oil - salt and pepper to taste.

Parmigiano Reggiano cheese


Direction

Start preparing the vegetable broth first: take a pot, add plenty of water and your vegetables: the carrot, half of the gold onion, the celery with its leaves, the juniper berry. Cook for at least 30 minutes. Keep it warm.


Take now a large pan, add olive oil and the other half of your onion, finely chopped. When it's going to be medium fried, add the asparagus cut in medium pieces and keep on frying for a couple of minutes, then, add the vegetable broth. Keep on cooking for 10 minutes around: your asparagus must result crunchy





At this point, add the rice and toast it for a minute about: when this time has passed by, add the white wine and let it evaporate completely. When wine has evaporated, start adding the broth, one ladle at a time and continue stirring till the risotto is cooked: you will need 15 minutes about to have a good risotto "al dente".

Add salt and pepper at your own taste, the butter and the parmigiano reggiano cheese, turn the heat off, and let it rest for a minute, covered.


If you want a vegetarian version of this risotto, you can replace butter with a vegetable margarine and avoid cheese.
