Soft Cake Without Eggs and Butter

Thinking also about health, we resort to a compromise that delights the palate without making us feel too guilty for yet another sin of gluttony ;-) A delicious, fragrant and soft cake that I often make, excellent for breakfast but also for a snack. I tell you that when I serve it my guests do not realize that it is a Light Recipe without eggs and butter and when I say it they are amazed.


  • 200 gr of flour 00

  • 150 gr of sugar

  • 1 big yellow and sweet apple

  • 1 sachet of baking powder

  • 1 sachet of vanillin

  • 250 ml of milk

  • 2 spoon of extra virgin olive oil

  • 1 lemon zest (Bio)

  • a pinch of salt

  • powdered sugar to decorate


Turn on the oven to 180 °C, in the meantime mix flour, yeast, sugar, salt, vanilla and lemon zest, gradually add oil and milk, stirring with electric whisk until you get a creamy mixture.

Stir in the peeled apple and cut into small pieces or slices, stirring well with a spoon. Grease the pan (with a little oil) sprinkling with flour (or put a sheet of parchment paper), pour the dough and bake for about 25-30 minutes. Once cold, decorate with icing sugar.
