Mediterranean Pasta: italian colors and flavors


Pasta Risottata Mediterranea

Today I'm thinking about colors and flavors of our beautiful Italy: tomatoes, basil, mint, aubergines, potatoes and parmesan. So I have decided to prepare a Quick and Easy "Pasta Risottata" wich means it is cooked directly with the sauce and not into the water.

If you add good quality of ingredients, the ones you usually have at home, you will enjoy a good dish in few and simple procedures: the result will be an amazing concentrate of aromas and flavors! Lets start!


Serving size 4:

  • 320 g fusilli pasta

  • 1 red onion

  • 2 medium-big potatoes

  • 2 long aubergines

  • 1 big cup of red and yellow tomatoes

  • fresh basil

  • fresh mint

  • 2 fresh or dried bay leaves

  • extravirgin olive oil

  • salt and pepper

  • grated parmesan cheese

  • flowers to decorate (if you want to cook and eat them, use only bio edibles ones)


Ingredienti

Peel the potatoes, cut them into strips and then into cubes, finely chop the onion, cut the aubergines into small pieces after washing and dabbing them with kitchen paper.

Put a pot of water on the fire and bring it to boil, add salt and flavor it with laurel, basil or some fresh herbs you like to combine and keep it always warm by lowering the heat.


In a large pan, brown the garlic and onion with oil,add the potatoes after a couple of minutes, stir and fry for a minute, add the aubergines and stirring constantly, continue cooking for a couple of minutes, helping if necessary with the flavored water that you have in the pot.


Add the whole cherry tomatoes, basil, mint and bay leaf, mix and cover with a lid, always making sure that the dressing does not shrink too much.

After 4/5 minutes remove the garlic and add the Pasta directly to the pan, pour the flavored water and continue cooking over high heat, continuing to add water one mix at a time until it is cooked, adjust salt if necessary.

Serve it with plenty of grated parmesan, fresh basil, a drizzle of oil and a nice mince of pepper, our Mediterranean Pasta Risottata is ready!

Wine: Muller Thurgau Valle Isarco Doc - Alto Adige - produced from 100% Muller Thurgau grapes, still white wine, straw color.

Taste: dry and soft
